Elkészítés:
Keverjük össze a kétféle lisztet és a csipet sót, majd adjuk hozzá a felkockázott vajat. Ezután kezdjük el összemorzsolni, majd amikor már jó morzsalékos keverjük hozzá a porcukrot, a vaníliás cukrot, és a kókuszreszeléket. Végül adjuk hozzá az egész tojást, és gyors mozdulatokkal gyúrjuk alaposan össze a tésztát.
Nedves kézzel formázzunk a tésztából diónyi golyókat, majd egymástól kicsit távolabb, helyezzük sütőpapírral bélelt tepsire. Ezután egy villával nyomjuk le a golyók tetejét, hogy kissé szétterüljenek.
Helyezzük be előmelegített sütőbe, majd közepes hőmérsékleten süssük 10-15 perc alatt szép aranybarnára. (én légkeverésnél 160 fokon, 12 percig sütöttem)
A sütőből kivéve hagyjuk pár percig a tepsiben, majd tegyük át egy rácsra a kekszeket, és hűtsük ki egészen.
A vajat keverjük habosra a porcukorral, a vaníliás cukorral, és a tejszínnel.
Ezután a teljesen kihűlt kekszet ragasszuk össze a dzsemmel, és a vajkrémmel.
Tegyünk a keksz közepére egy mokkáskanál dzsemet, majd a dzsemre egy mokkáskanál vajkrémet. Ezután helyezzünk rá egy másik kekszet, és óvatosan kicsit nyomjuk össze. (így járjunk el az össze keksszel)
