A nagyobb aszalt gyümölcsöket, és a mandulát összevágjuk, majd elkeverjük a nyílgyökérporral. A tojásfehérjéket elkezdjük felverni a csipet sóval. Amikor félkemény, kanalanként hozzáadjuk az édesítőt, majd a citromlevet és kemény habbá verjük.
Beletesszük a nyílgyökérporral elkevert gyümölcsöket és óvatosan elvegyítjük. Az olvasztott olajat az edény faláról kanalanként belecsurgatjuk, és mindegyik kanál után elkeverjük.
Kiolajozott, teflonos őzgerinc formába vagy koszorú formába öntjük. (Ha szükségesnek látjuk, béleljük ki a formát sütőpapírral.) Előmelegített sütőben 180 fokon 25- 30 perc alatt megsütjük. Tűpróbával ellenőrizzük, hogy átsült e.
Rácsra borítva teljesen kihűtjük. A csokit az olajjal vízgőz felett felolvasztjuk és bevonjuk vele a sütit.
