A sárgarépát apróra vágjuk, megfőzzük, majd még melegen pürésítjük. (botmixerrel a legegyszerűbb)
A tojássárgákat habosra keverjük az édesítővel, kb. 3-4 percig. Közben a csokit a kókuszolajjal vízgőz felett felolvasztjuk, majd hagyjuk langyosra hűlni. A kihűlt olvasztott csokit a felvert tojássárgához keverjük. Hozzáadjuk a répapürét is, majd a vanília esszenciát és a darált mandulát.
A tojásfehérjéket kemény habbá verjük, és óvatosan a csokis masszába forgatjuk.
Egy 23 cm-es formát kikenünk kókuszolajjal, beleöntjük a masszát és 180 fokra előmelegített sütőben kb. 30-35 perc alatt megsütjük.
A torta közepe ilyenkor még kicsit sületlennek látszik, de ilyennek kell lennie. Kihűlve szervírozzuk, felvert kókuszkrémmel, de bogyós gyümölcsökkel, lekvárral vagy magában is finom.
