Elkészítés:
A palacsintához a hozzávalókat alaposan keverjük össze, kézi habverővel. Sűrű palacsintatésztát kapunk.
Érdemes kb fél órát pihentetni, ha szükséges vízzel tovább hígítható.
Teflon, vagy kerámia serpenyőben, amit előzőleg kókuszzsírral kikentünk, süssük ki a palacsintákat.
(Ebből a mennyiségből nekem 10 darab palacsinta lett.)
Az előzőleg kiválogatott, átmosott kölest megfőzzük csipet sóval. Fedő alatt hagyjuk kihűlni. Amikor kihűlt késes aprítóba tesszük, hozzáadjuk az édesítőt és a pudingot és jó krémesre összedolgozzuk. Ízlés szerint tovább ízesíthető citromhéjjal, mazsolával.
A tojásokat ketté választjuk. A tojások fehérjét kemény habbá verjük, hozzáadjuk a tojások sárgáját és krémesre keverjük. Végül óvatosan beleforgatjuk a köleses krémet.
A palacsintákat megtöltjük a töltelékkel, feltekerjük, majd középen kettévágjuk. Egy tűzálló tálat alaposan kikenünk kókuszzsírral, majd belesorakoztatjuk a palacsintákat. Úgy, hogy a vágott felükkel felfelé álljanak, majd kissé egymásra csúsztatjuk őket.
Az öntethez simára keverjük a tojást a rizstejjel és a vanília kivonattal. A palacsinta rakottas tetejére kanalazzuk és a forró sütőben aranybarnára sütjük, 20-25 perc alatt. Öt percig pihentetjük, megszórjuk porXukorral, és a sütőedényben még langyosan tálaljuk.
