Hozzávalók:

Elkészítés:
A padlizsánt héjastól 5 cm-es csíkokra vágjuk.
A vöröshagymát, a zeller zöldet és a csípőspaprikát külön-külön felaprítjuk.
A kurkumával és a sóval összekevert padlizsándarabokat wokban 1 evőkanál olajon pirosra sütjük, majd kivesszük.
A hagymát kevés olajon üvegesre pároljuk, a padlizsán és a curry kivételével a többi hozzávalót hozzáadjuk és puhára pároljuk úgy, hogy leve ne maradjon.
Hozzáadjuk a curryt és a padlizsánt, és teljesen szárazra pároljuk.
Tálalásig melegen tartjuk.

Nem teljesen autentikus, mert én nem bő olajban sütöm a padlizsánt, hanem kevés olajban, wokban pirítom meg.
