Hozzávalók:

  • 3 db cékla ( héjastól kb. 50 dkg)
  • 1 db édeskömény
  • 1 evőkanálnyi olívaolaj
  • 1 dkg-nyi (szerintem kevesebb volt) vaj
  • só
  • frissen őrölt bors
  • 1 evőkanálnyi balzsamecet
  • 5-6 dkg kék sajt (pl: gorgonzola vagy dán kék sajt)

Elkészítés:

A céklákat meghámozzuk, félbe vágjuk és cikkszerűen felszeleteljük. A vaj és az olaj keverékén elkezdjük párolni.
Közben az édesköményt vízszintesen felszeleteljük és hozzáadjuk a céklához.

Kis ideig együtt pároljuk majd felerősítjük a tüzet és megpirítjuk. Amikor az elképzelésünk szerinti “karamellizált ” állapot beállt, megszórjuk durva szemű tengeri sóval (ne sózzuk meg hamarabb, hogy a só által kivont vízben ne kezdjen párolódni), és őrölünk rá borsot.

Erős lángon átkavarjuk párszor, majd löttyintünk rá egy evőkanálnyi balzsamecetet, ami szinte azonnal el is párolgott róla a magas hőfok miatt, az íze viszont benne marad.

Elzárjuk a tűzhelyet, kiöntjük az egészet a serpenyőből egy tálalóedényre, őrölünk még borsot a tetejére és rámorzsoljuk a kék sajtot.
