Ez alatt krumplitörővel vagy villával összetörjük a túrót, majd hozzáadjuk a porcukrot, a citromhéjat és a vaníliás cukrot, majd az áztatott mazsolát a tejjel és jól kidolgozzuk.
A tojás fehérjéből kemény habot verünk. A túrótöltelékhez óvatosan hozzákeverjük a tojáshabot és attól függően, ki milyen sűrűn szereti a tölteléket a lisztet is beletesszük.
A tésztát egyharmad-kétharmad arányban elvágjuk. Lisztezett deszkán a nagyobb tésztát tepsi méretűre kinyújtjuk nyújtófára tekerjük és a kivajazott,lisztezett tepsibe helyezzük.
