Elkészítjük a tölteléket. Ezt célszerű a bejgli összeállítása előtt 1 nappal előkészíteni, mint ahogyan a tésztát is! Egy éjszakát mind a kettő pihenhet a hűtőben.
A darált mákot összekeverjük a porcukorral, ízlés szerint reszelt narancs vagy citromhéjjal és egy marék mazsolával.

Összeállítás:
Lisztezett deszkán egyesével kinyújtjuk a tésztát szép vékonyra (3-4mm). Megkenjük a töltelékkel a szélén 1-1,5 centit elhagyva, majd feltekerjük a bejglit.
Tepsire sorakoztatjuk, lekenjük 1 felvert tojással, majd 20 percre a kamrába (vagy más hűvös helyre) tesszük, hogy megszáradjon rajta a tojásos réteg.
Megismételjük a lekenést vagy egész tojással vagy csak fehérjével, és újabb 20 percet pihentetjük. Megszurkáljuk egy villával vagy hústűvel a tetején és az oldalán is. (ha ez kimarad szétreped a bejgli)
180 fokra előmelegített sütőben szép aranyszínűre sütjük. (kb 25-30 perc alatt)
