Hozzávalók:(24 cm-es tortaformához)
A tortalaphoz:
A krémhez:
A díszítéshez:

Elkészítés:
A tojások sárgáját langyos vízzel összehabosítjuk, majd a cukorral fehéredésig keverjük.
Belekeverjük a reszelt citromhéjat, és a sütőporos lisztet.
A legvégén, lazán beleforgatjuk a csipet sóval keményre vert fehérjehabot.
160-180°C fokon tűpróbáig sütjük.
Majd hagyjuk kihűlni.
A zselatin 3-4 evőkanál vízben feloldjuk (langyosra melegítjük,hogy feloldódjon benne).
A mascarpone krémet elkeverjük a citromlével,epervelővel és citromhéjjal.
Hozzákeverjük a feloldott zselatint.
A tejszínt a porcukorral és a habfixálóval habbá verjük, és összeforgatjuk az epres krémmel,majd hozzáadjuk az eperdarabokat.
A tortalapot 2 részre vágjuk.
Az alsó lapot visszatesszük a tortaformába, és rásimítjuk a krém 3/4részét.
Befedjük a másik tortalappal, és hűtőbe tesszük, míg a krém megdermed.
Óvatosan levesszük róla a tortaformát,és szeletelt mandulával díszítjük az oldalát.
A maradék krémmel bevonjuk a torta tetejét, végül tejszínhab rózsákkal, reszelt csokoládéval és eperszemekkel díszítjük.
Tipp/Megjegyzés:
Készíthető mascarpone nélkül is, csak tejszínnel, de akkor aznapi fogyasztásra javasoljuk.
Amennyiben mascarpone és kevés zselatin is kerül bele, másnapra is ugyanolyan szép/finom marad.
