Elkészítés:
A kókusztejbe beleöntjük a rizst, a vaníliát és a reszelt citromhéjat, majd addig főzzük, amíg a rizs megpuhul. A rizs egy kicsit maradjon roppanós, hiszen sütés közben is puhul majd. Tegyük bele a vajat és hűtsük le.
A tojásokat válasszuk szét. A tojások sárgáját a cukorral keverjük habosra, majd tegyük bele a ricottát, a kókuszlikőrt és a mazsolát.
A tojások fehérjét a csipet cukorral verjük kemény habbá.
A kihűlt rizst keverjük bele a ricottás masszába, majd óvatosan, hogy a hab ne törjön össze, keverjük bele a felvert tojásfehérjét.
Egy 26 cm-es tortaformát vajazzunk ki és öntsük bele a masszát, majd a tetejét szórjuk meg a mandulával. 170 fokra előmelegített sütőben 50-60 percig sütjük.
Amíg sül a rizsfelfújt, készítsük el az eperszószt. Az epret vágjuk apró darabokra és szórjuk meg a cukorral. Hagyjuk állni 20 percig, hogy az eper levet engedjen, majd öntsük bele a likőrt és tegyük fel főni. Amikor az eper összeesett, tegyük bele az apróra vágott bazsalikomot és turmixoljuk kicsit össze.
A rizsfelfújtat hagyjuk kicsit hűlni, majd tálaljuk az eperszósszal és öntözzük meg egy kevés balzsamecetszósszal.
