180 fokra előmelegítjük a sütőt.
Sóval és borssal bedörzsöljük a húst. Egy éles késsel a csirkemellek oldalába egy-egy határozott vágással „zsebeket” vágunk. Vigyázzunk, ne vágjuk át teljesen a másik oldaláig.
Egy tálban összekeverjük a fetát, az apró kockákra vágott paradicsomot, a felkockázott olívabogyót, a finomra vágott kaprot és petrezselymet. Hozzáadjuk az apró kockára vágott hagymát és 1 evőkanál olívaolajat. A paradicsomos töltelékkel óvatosan megtöltjük a csirkemelleket és az oldalakat összenyomkodjuk. Akár hústűvel is megtűzhetjük. Vigyázzunk, hogy ne töltsük túl őket.
