A hagymát és a petrezselyemgyökeret apró kockára vágjuk és kevés olívaolajon megpároljuk.
A céklát meghámozzuk és apróra vágjuk, vagy nagy lyukú reszelőn lereszeljük. A hagymás alapra tesszük, majd 1-2 percig kevergetjük és felöntjük az alaplével. Végül beledobjuk a kockára vágott burgonyát.
Puhára főzzük a zöldségeket és a végén beletesszük a kockára vágott almát, amivel még kb. 2 percig főzzük, majd leturmixoljuk a levest. Ha szükséges adjunk még hozzá vizet.
A kaprot apróra vágjuk és a leturmixolt levesbe szórjuk.
Tálaláskor minden tányérba egy kanál tejfölt teszünk.
