A hagymát, a paprikát és a paradicsomot felszeleteljük.
Egy serpenyőben kevés olajon megpároljuk a hagymát, majd rátesszük a paprikát, végül a paradicsomot. Ízlés szerint fűszerezzük, majd tovább pároljuk.
A tojásokat feltörjük, és különválasztjuk a sárgáját a fehérjétől. A sárgáját elkeverjük, majd hozzáadjuk a csipet sóval kemény habbá vert fehérjét.
Ráöntöm a készre főzött lecsóra, és kb 5 perc alatt megsütjük a tojást.
Ízlés szerint kenyérrel, bagettel vagy rizzsel is tálalhatjuk.
